Ingredients:
- 2 large sweet potatoes
- 4 tablespoons unsalted butter, softened
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions:
Preheat the oven to 400F 200C
Scrub the sweet potatoes and pat them dry
Using a fork, pierce the sweet potatoes a few times to allow steam to escape while baking
Place the sweet potatoes on a baking sheet lined with parchment paper and bake for about 45-60 minutes, or until tender
In a small bowl, mix together the softened butter, chopped parsley, chives, thyme, salt, and pepper until well combined
Once the sweet potatoes are done baking, remove them from the oven and let them cool slightly
Slice each sweet potato open lengthwise and fluff the flesh with a fork
Spread the herbed butter generously over each sweet potato, allowing it to melt into the flesh
Serve immediately, optionally garnished with additional chopped herbs
