A tasty vegan bowl with brown rice, refried beans, sauted bell peppers, onions, avocado, and a Cajun sauce that tastes like smoke. Great for a filling dinner!
Ingredients:
- 1 cup cooked brown rice
- 1 can 15 oz refried beans
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- 1 avocado, sliced
- Fresh cilantro, for garnish
Instructions:
In a large skillet, heat olive oil over medium heat
Add sliced bell peppers and onion to the skillet
Season with smoked paprika, garlic powder, onion powder, oregano, thyme, salt, and pepper
Cook until vegetables are tender, about 8-10 minutes
Add the refried beans to the skillet, stirring to combine with the vegetables
Cook for an additional 2-3 minutes, or until heated through
To assemble the bowls, divide the cooked rice among bowls
Top with the refried bean and vegetable mixture
Garnish with sliced avocado and fresh cilantro
Serve the bowls with smoky Cajun sauce on the side, if desired
