Ingredients:
- 2 cups cooked and mashed carrots
- 1 can 15 oz chickpeas, drained and rinsed
- 3 cloves garlic, minced
- 1/4 cup tahini
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley for garnish
Instructions:
In a food processor, combine the cooked and mashed carrots, chickpeas, minced garlic, tahini, olive oil, lemon juice, ground cumin, paprika, salt, and pepper
Blend until the mixture is smooth and creamy
You may need to scrape down the sides of the processor and blend again to ensure everything is well combined
